Chocolate Pear Baked Oats

Ingredients (for 1-2 persons)

70 g oatmeal, 200 ml vegetable milk, 1/2 scoop vanilla soy protein powder, 1 tbsp chia seeds, 1 tsp baking powder, 1 tsp cinnamon, pinch of gingerbread spices, 1 tsp vanilla extract, üinch of salt, 50 g vegetable quark,  almond shavings, almond paste, grated coconut


Preheat the oven to 180 degrees

Start making the pear compote

1. Cut the pears into small pieces

2. Heat a pan on the stove and add the pear pieces. Add the rest of the compote ingredients except the raisins. Let it cook for 10 – 15 minutes until it thickens into a compote. Add the raisins and heat through for a while. Then remove the cardamom pods and star anise from the compote and then set it aside while you prepare the rest

3. Put the oatmeal in a blender together with the vegetable milk, about half of the pear compote, chia seeds, baking powder, vanilla extract, cinnamon, gingerbread spices and a pinch of salt. Blend this until smooth

4. Use one or two oven dish(s) and add half of the batter. Put the rest of the pear compote in the middle of the pan and add the vegetable quark to this as well. Then pour the rest of the batter over it

5. Place the dish in the oven for about 20 minutes

6. Finish with some toasted almond shavings, grated coconut and almond paste

Yoghurt Cake with Pears and Almonds

Ingredients: 1 plain cup of yoghurt, 2 cups of flour, 1 cup of almond flour, 1 cup of brown sugar, 1 pack of baking powder, 2 eggs, 1/2 cup of sunflower oil, 2 tbsp of aged rum, 2 pears, sliced almonds

Preheat the oven to 180°C (350°F).
Pour the yoghurt into a bowl.
Clean the pot and dry it.
In a mixing bowl, combine the flour, almond powder, sugar, and baking powder. Mix well.
To the yoghurt, add the eggs, oil, and rum.
Mix in a blender, then pour this mixture over the dry ingredients. Mix gently until just combined.
Pour the batter into a greased and floured 22 cm (8-inch) mould.
Slice the pears and arrange them on top of the batter, pressing them in slightly.
Sprinkle with sliced almonds.
Bake for 30-35 minutes.
Allow to cool slightly before unmolding.
Serve with salted caramel sauce.
